  1. Mmm, this looks delicious! We love roasted vegetables here to 🙂 I’ve been making a lot of vegetarian meals for the kids and myself while hubby is away working and we’re totally in love with bean burgers right now. The kids can’t get enough of them so I think that’s what is for dinner tomorrow *grin*.

    Drool!! That about sums it up. The only thing I might change are the brussel sprouts. I have never learned to love those. But cauliflower would work, yes? And what wonderfully healthy meals your kids are receiving!

    Mmmmm, this post was a feast for the eyes–the colors! I’m trying to make more vegetarian meals (per the request of my 13 yo dd), and this recipe looks delicious and satisfying.

    I love roster veggies too. The yogurt sauce and toasted nuts/seeds is a great idea to make it into a simple meal. I can speak from experience that roasted cauliflower is amazingly good!
