    Mmmh, that looks yummy! So many cherries! I’ve not really tried to make any jam since I moved out from my parents many years ago. We used to make alot!

    I did make some apple sauce last year. I was very disappointed about the ratio between the amount of apples needed and the amount of apple sauce left in the end ๐Ÿ™ I like apple sauce.

    And then two of my glasses exploded! Somehow I didn’t seal them properly, the sauce did some chemistry and then exploded. Quite cool but not edible. I had two glasses left and only yesterday opened one of them. It tastes really nice ๐Ÿ™‚ We needed apple sauce to go along with potato pancakes / fritters. That’s a very traditional local thing to have. Either with apple sauce or sugar beet sirup. Yum! You need a proper kitchen machine to grate all the potatoes and have to live with grease smell for a day. But it is worth it ๐Ÿ™‚

    Oh, I am obsessed with canning too. I have made strawberry bay leaf jam and sweet apple cider baby beets some time ago (I have post about them: http://apseed.blogspot.com/2011/06/i-can.html).
    This week I had to deal with peaches and carrots. I do all my canning preparations alone, so it takes a lot of time, but I still love it.

  3. Oh, yum. I only got around to making plum jam in summer this year and a small amount of tomato sauce. I only add half the amount of sugar for making jam (ie only 500gm to each kg of fruit) and I don’t add pectin. Although I sometimes add a squeeze of lemon. My jams always seem to turn out ok, I just simmer it longer to aid the thickening of the jam. The jam seems to keep well considering the lesser amount of sugar. Happy jam making! Jacinta

    I am new to jam making and I did not know you could omit pectin. I agree with you that it is too sweet! My dad makes lots of “butters” (apple, pumpkin) and the only sweetener he uses is fruit juice (he freezes it)

    Oh yes, I can… jams, tomatoes, relishes (this year zucchini–sweet and a spicy one), pickles of all kinds. Many things I freeze. The heat is intense, here in the south U.S. so I do limit the time with the stove on… Your jam looks lovely!

    If I never had the pleasure of eating a cherry, I’d be content looking at a bowl full of them – the most beautiful jewels! I thought I’d try canning this summer, but the strawberries were so late that I’ve lost interest. Perhaps following your obsession will inspire me to try again when the blackberries are ripe!

    I love canning. Unfortunately I don’t have any recipes from my grands though I am sure they canned some. I did “make up” a peach jam recipe last year and it turned out great if I say so myself. But did I write it down? Of course not!

    I can everything and anything I can get my hands on! I have learned thru the years to rotate what I do [last year was tons of pickles, this year none] so I can vary what is in my pantry. Next week I start on tomatoes which we use a lot of so they get extra batches. I gather all hands to help, but I am the one who runs the pressure cooker. My climate needs the pressure cooker for tomatoes,sauce, salsa, beans, corn; I waterbath everything else. We don’t grow cherries here, but I bet they make a nice jam! Have a great time.

  10. I’ve never canned in my entire life, but as I read more and more, I think I’d like to. I’ll have to get some books from the library. Maybe next year.

    We got a late start on our veggie garden this year. ๐Ÿ™

    Not sure if they’re available in your area, but I find that Roma tomatoes make the best tomato sauce. Maybe once my tomatoes come in for this year I’ll put up some tomato sauce. Hmmmmm…

    I just started canning last year and I love it! This year I am making way more but I have no good recipes for canning veggies and I admit Im a little nervous about canning low acid content foods. Have any suggestions?

    Oh, I can relate to your obsession. Cherries are just the best.
    When I first came to England, I was part of the ‘food processing workshop’ in the special school where I worked, and we made jams and juices every afternoon, all year round. I haven’t made any in ages, and really miss it now!

    This is an incredible post! I would love love love to learn canning, but haven’t made that leap yet. I did accomplish a dozen jars of freezer jelly earlier this summer, and it is almost gone…
